Available select evenings from 6 to 9 p.m., Tacology transforms the resort’s garden into a lively open-air gathering spot where the art of the taco takes center stage. Guests are invited to explore a curated selection of Mexico’s most beloved taco traditions — from the slow-marinated, spit-roasted al pastor crowned with a touch of golden pineapple, to the tender suadero and savory beef, each prepared with authentic technique and the finest ingredients. Every taco is dressed with the classics that make Mexican street food an enduring culinary tradition: fragrant cilantro, finely chopped white onion, and vibrant molcajete-style salsas, crafted fresh and full of character. Evenings are rounded out with warm, crispy churros — the perfect sweet note to close a perfect Mexican meal.
