Chicken, Chicken, Chicken. If you are like me you probably cook chicken a lot, but the flip side is coming up with new ways that are both easy and tasty that your family will eat. I found this chicken recipe from Getting Laid: Everything You Need to Know About Raising Chickens, Gardening and Preserving with Over 100 Recipes! by Barb Webb. Not only is it delicious, it is so simple to make and most importantly, my daughter loves it. I also try to make extra so I will have some leftover lunch the next day.
EASY CHEESY GARLIC CHICKEN
Directions
1.In a 10 x 13-inch glass baking dish, add tomatoes, garlic, basil, rosemary and oregano. Stir gently to mix.
2. Place chicken breasts on top of the tomato mix. Bake for 35-40 minutes. Remove from oven. Use a spoon to ladle and cover tops of chicken breasts with tomatoes.
3. Sprinkle cheese evenly over chicken breasts. Return to baking dish to oven. Bake for 5-10 minutes (or until cheese is bubbly). Remove from oven. Serve over rice or pasta.
