Winter is all about keeping warm and what better way than to have a delicious bowl of soup either as an appetizer or a meal. This vibrantly colorful Broccoli Soup is not only full of nutrients but also offers protein from the raw cashews that are blended in and gives it a creamy richness.
Cream of Broccoli Soup
Ingredients
1 cup of raw cashews, soaked in water for 2 hours
4 cups of chicken broth
6 cups of broccoli, steamed
1 teaspoon garlic powder (or season to taste, I added 2 teaspoons)
Kosher salt and pepper to taste
Parmesan cheese
Directions
1. Blend the cashews and one cup of broth in a blender and process until smooth.
2. Add remaining ingredients and blend, starting slowly and increase the blender speed until smooth.
3. Transfer soup to a saucepan, add seasonings to taste and simmer until heated through.
Depending on your taste buds, this soup may need more seasoning. I added a tablespoon of parmesan cheese to add flavor.
Serves 4- 6. This makes a great and filling lunch soup paired with a salad and crackers.
